Brining-Turkey For Thanksgiving!

You know it doesn't have to be Thanksgiving to cook a Turkey. Hosting a party? Brining-turkey is a simple and is a fabulous way to enhance the flavor and deliciousness of your main course.

Simple Brine: 1 cup salt to 1 gallon of water, soak turkey 1 hour for each 10 pounds. Be sure to rinse the turkey thoroughly after brining to remove the excess salt. Now you're ready to Roast, grill, fry, or smoke as usual.

Tasty Brine: 1 1/4 cup salt, 1/2 cup brown sugar, 1 gallon vegetable stock, 1 Tbsp black peppercorns, 1 Tbsp allspice berries, 1/2 Tbsp candied ginger, 1 gallon ice water.

Preparation Pour vegetable stock into a large pot over high heat. Add salt, brown sugar and spices. Bring it to a boil. Remove from heat, cool. Pour in ice water and stir to combine.
