Homemade or Super Walmart

Green-Bean-Casserole is an awesome dish for any occasion. My family always has it during the holidays so I thought it would be a great addition to the holiday recipe section. Making it from scratch takes a little time but if you're in a hurry... the Super Walmart version takes no time at all.

Wallmart Way... is pretty simple. I'll start with that since it will only take a few lines.

Here's what you're going to need for about 4 servings

2 cans of French cut green beans

1 can of Campbells Cream of Mushroom soup

1 can of French's french fried onions

1/2 cup milk

1/2 teaspoon freshly ground black pepper

What to do next...

1. Combine green beans, soup, milk, pepper, 1/4 to 1/3 the can of onions, (and soy if you want it) in a 9 X 13 inch casserole dish.

2. Bake it at 350 degrees F for just less than half an hour.

3. Once it's bubbling hot, stir it a little and top it with the rest of the fried onions (some cheddar cheese on top isn't bad either).

4. Bake it 5 more minutes to brown the onions a little.

That's it... serve and enjoy!

From Scratch... Green-Bean-Casserole

Making Green-Bean-Casserole from scratch takes a little more time but the effort is well worth the prize.

Here's what you're going to need for about 4 (or 5) servings

16 oz of fresh green beans, rinse, trim and cut-em in half (longways)

2 tablespoons of coarse salt

2 tablespoons unsalted butter

12 oz of mushrooms rinsed and sliced

2 tablespoons all-purpose flour

1/2 teaspoon freshly ground black pepper

1/4 teaspoon nutmeg

2 cloves garlic, minced

1 cup chicken broth

1 cup half-and-half


2 medium sized onions thinly sliced (about 12 oz)

1/4 cup bread crumbs

1 1/2 teaspoon coarse salt

1/4 cup all-purpose flour

Preparing the onions for the Green-Bean-Casserole. Two ways you can do this... one is a little healthier than the other. The first and healthier way is to bake the onions... the second is to deep fry them like onion rings. Since I'm a healthy guy... I'm going to go with the first choice

1. Preheat the oven to 475 degrees F.

2. In a large bowl, combine the onions, 1/4 cup flour, bread crumb and salt and toss coating the onions.

3. Use a cookie sheet or similar shallow pan, coat with pam or similar non-stick spray then spread the onions out evenly. (Or fry them if you desire)

4. Bake the onions for approx 30 minutes turning them 2 or 3 times until golden brown. Remove from oven and set aside

Doing the beans...while the onions cook.

1. Bring a gallon of water (big pot) to boil (don't forget to add 2 tablespoons salt).

2. Put the beans in the big pot of boiling water for 5 min!

3. Drain the beans using a colander and then immediately pore them into a bowl of iced water to stop the cooking. Drain again and set aside.

Time to prepare the sauce... for the Green-Bean-Casserole.

1. Using a 12 inch cast iron skillet (if you've got one) melt butter over medium heat.

2. Then add the mushrooms, 1 teaspoon salt and pepper. and cook for about 4 or 5 minutes.

3. Add garlic and nutmeg and continue cooking for another couple minutes.

Sprinkle the flour (2 tablespoons) over the sauce and stir. Cook 1 more minute.

4. Add chicken broth, simmer for 1 minute.

5. Reduce the heat to medium low, add half and half and cook 6 to 8 minutes until the sauce thickens. Stir occasionally.

Putting it all together!

Remove the sauce from the heat and stir in the beans and about 1/4 of the onions. If you're using a cast iron skillet simply top mix with the remaining onions and bake the Green-Bean-Casserole for about 15 minutes. If you're not using a cast iron skillet dump it into a 9 X 13 inch casserole dish and bake it the same way. Once it beings to bubble.... Remove, serve and enjoy!
