Oyster-Stuffing...A Thanksgiving Treat!

Oyster-Stuffing is a great recipe to add to the turkey before cooking!

Here's what's in it...

1 cup butter or margarine

1 cup minced onion

1 pint small oysters, drained and chopped (can buy these in a can... but fresh is obviously better!)

1 tablespoon crumbled poultry seasoning

1 1/2 teaspoon salt

1/2 teaspoon pepper (I like freshly gound)

1/4 cup chopped parsley

3/4 cup finely chopped celery with leaves

10 to 12 cups soft-stale bread crumbs

2 eggs, beaten

Oyster-Stuffing

Here's What You Do...

1. Melt butter in skillet.

2. Add the onion and celery & cook for 5 minutes.

3. Next add oysters, poultry seasoning, salt, pepper, parsley and cook for an additional 5 minutes.

4. Add the beaten eggs and everything else we haven't put in there yet.

Makes about 10 cups as stuffing for turkey.
