Broiled Lobster
Valentines-Day-Recipes is sure to
impress your valentine! It's actually a very easy dish to prepare. I've
been "Buggin" for years in the Florida Keys and in Southern California
so this is something I can tell you with great confidence. Don't let
the Lobster intimidate you... you can't mess this up!
Ingredients:
2 Lobster Tails (Frozen is OK)
1/2 cup butter
2-3 (or more :) Garlic cloves
1/2 teaspoon ground paprika, salt to taste
ground white pepper to taste (or not...)
1 lemon cut in wedges

Cooking Directions
Prepare the lobster by cutting the shell down the
center on the top
(hard) side. You can leave the meat inside the shell or pull it out so
it's held in the shell by the tail and the rest sits on top. Just be
aware that it will cook much faster that way especially if you're
broiling. Better to bake it if you want the presentation. I'm not that
fancy so I just leave it in the shell and cut it in have when it's time
to eat... I mean.... who cares what it looks like when it's in your
stomach? Right?

Put the cut tails into a glass baking dish (Pyrex)
Put the garlic cloves through a press or finely
chop them
Combine
the butter and garlic in a small sauce pan and melt. Once it's melted
pour it onto the lobster meat (save a little for dipping later)
Salt & pepper to taste if you want but it
tastes great just like this.
Pre-heat
the broiler and cook the Lobster low as you can go in the oven for
about 10 minutes. Watch it constantly to make sure it doesn't get over
cooked. The shell will turn bright red and the meat white when it's
cooked. Uncooked lobster meat has a transparent look to it so make sure
it's white.
Cut the lemon into wedges and use for garnish

OK... I'll admit that this is the easiest thing to
make here. I buy
the "Near East" Brand. It takes about 5 minutes to prepare and a child
could do it. Just read the directions on the box.
Blanching
Asparagus...
Ingredients:
1 bundle of thick asparagus
2 tablespoons olive oil
2 garlic cloves minced
salt & pepper to taste
What to do now...
1. Snap the thick end of the asparagus at it's
natural breaking
point. Grab both ends and bend until the spear breaks at the its tender
spot naturally.
2. Using a large pot or skillet bring just enough
water to cover the
asparagus and season generously with salt... bring to a boil.
Have a large bowl of water with ice standing by!
3. Add the asparagus to the boiling water and cook
